Cooking Practices

  1. All yellowfin (Ahi) tuna menu items are served seared with a cool red center (you have the option to grill your tuna medium to well done.  Just let us know).  Our tuna is prime (sushi-grade) yellowfin (Ahi) tuna & we believe it to have a better flavor when seared.  Because these Ahi products are seared, they will be served warm to cool.  Consuming raw or undercooked meats, poultry, seafood, shellfish or eggs may increase your risk of foodborne illness especially if you have certain medical conditions.  
  2. Handmade Guacamole, salsas & unique sauces.  Every morning, our kitchen crew is busy practicing their craft in our state-of-the-art kitchens making fresh guacamole, salsas, our unique sauces & dressings.  Our hand-crafted guacamole begins with fresh, Grade A Haas avocados and other select ingredients.  Our salsas are made fresh daily using only the highest quality ingredients.  Our Salsa Rojo is blended with ripe tomatoes, cilantro, jalapenos and other proprietary fresh ingredients and spices, while our Salsa Verde is fire-roasted and blended with fresh green tomatillos, jalapenos, garlic, cilantro and avocado.  Our unique sauces combine the use of exotic chilis such as chipotle, ancho, pasilla and guajillo chili peppers.  And of course, all of our salad dressings are made from scratch
  3. Tortillas are pressed fresh for each order with your choice of 100% corn, flour or whole wheat
  4. Our menu is Gluten-free “except” for these five items: any steak product (soy marinade), anything with Mole’, El Dorado tacos (soy ginger marinade), wheat & flour tortillas
  5. Our complimentary chips are Gluten-free, 100% white corn & friend in pure vegetable oil in a dedicated fryer
  6. Allergies:  Please inform us of any allergies you may have.  We’re more than happy to comply with your special requests  
  7. In order to manage Cross-contamination, we employ the use of color coded tongs, knives & cutting boards to keep things safe
